A tribute to Julia Child that you will love for its intense flavor! For this dish, you will need: 3 live lobsters or 6 lobster tails, olive oil, 1 medium carrot, 1 medium onion, 3 tablespoon minced shallots, 1 clove mashed garlic, 1/3 cup cognac, 1 tablespoon chopped tomatoes, 2 tablespoons tomato paste, 1 cup fish stock, 2 cups dry white wine, 2 tablespoons parsley, 1 tablespoon tarragon, 6 tablespoons butter, 1 tablespoon fresh tarragon, juice from 1/2 a lemon, salt and pepper.
